Fall and food.....


What is it about fall that makes many of us just start thinking.......food........good stick-to-the-rib comfort food. Pot roast, stew, potato soup, well any homemade soup....., roast chicken, mashed potatoes, gravy, squash, chili and I am sure the minute I stop typing I will think of a bajillion more wonderful things that I love to eat, but only seem to eat in the fall/winter. Now see I was trying to stick to good healthy dinner type foods...........but my goodness, would I be "moi" if I didn't add desserts? Nope.....just wouldn't be me with out sweets. I love almost all things apple.......pie, cobbler, crisp, cake.......you name it and I will be trying my best to act lady like, but elbowing others out of the way to get in line. This recipe was shared yesterday from the same lady that shared the wonderful decorating sites......let's see if I can copy and paste it..........nope, so now I will have to type it...........sigh............
Fresh Apple Cake
Ingredients
1 cup canola oil
2 cups sugar
3 eggs
2 1/2 cups flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp salt
2 tsp. ground cinnamon
1 tsp ground nutmeg
1 tsp vanilla
4 cups peeled and chopped Granny Smith apples
FROSTING
1 (8ox) cream cheese - room temp
1 stick butter - softened
4 1/2 cup powdered sugar
2 tsp. vanilla extract
1 cup toasted pecans
Combine oil and sugar together in a bowl;beat in eggs. Sift all dry ingredients together and then add to egg mixture. Fold in vanilla and apples. Pour into a greased 9 x 11 pan. Bake at 325 for 1 hour; set aside to cool
For the frosting, combine cream cheese and butter in a large bowl using mixer. Gradually add the powdered sugar; beat until smooth and then add vanilla. Frost the cooled cake and then sprinkle pecans over the top. Makes 12 to 15 servings.
Won't be making it this week-end, as we will be having a special birthday cake for my daughter's birthday. It's coming from some special bakery, so my mouth is waiting in anticipation. Maybe I will make this cake the following week-end.........if you make it first, share how wonderful it tastes........I just KNOW it is going to be moist and yum dilly ious.

That does sound great! I love making lots of stuff with apples in the fall. I make so much homemade applesauce we can swim in it but my kids eat it all!
